Let’s Eat Seasonal: March Recipes Round-Up

On the cusp of spring, March brings new produce for fresh recipes and, at the same time, leaves room for hearty wintery dishes. Amongst this month’s gifts from the earth, you can find kale, cauliflower, potatoes, peppers and apples.

We’ve rounded up five recipes with these produce and you can easily whip them up with your little sous-chef. Let us know which one is your favourite!

Apple Traybake

An apple a day keeps the doctor away… and we’re sure it doesn’t matter if the apple is sliced, then baked in a yummy, sugary batter! This moreish recipe from BBC Good Food is the perfect treat for tea-time or an indulgent breakfast.

Tasks for your little sous-chef:

  • mix butter, caster sugar, eggs, vanilla, flour and baking powder into a large bowl;
  • layer apple slices and cake batter in the tin;
  • sprinkle with Demerara sugar.

Potatoes and Fish Mash

Everyone loves potatoes. They can be cooked in so many different ways that you just can’t get tired of them!

This potatoes and fish mash will introduce a novelty in your potato repertoire and will sneak some fish into your little sous-chef’s tummy.

Tasks for little sous-chef:

  • mix the mashed potato and fish with your hands or fork;
  • shape into a fish;
  • decorate with veggies to make eyes and scales.

Cauliflower Pizza

Ignored and sneered at for so long, cauliflower has finally claimed its place in the Olympus of the yummiest veggies.

The recipe of this gluten free, veggie-friendly pizza base has taken the world by storm. All you have to do is whizz up the raw cauliflower in the food processor, steam it, squeeze the liquid out and flatten it into a pizza base. This recipe from Detoxinista is particularly yummy and easy to follow.

Tasks for your little sous-chef:

  • squeeze the liquid out of the tea towel, make sure the mixture has cooled down, to avoid burnt little hands;
  • flatten out the base;
  • play with toppings and compose their special pizza.

Stuffed Nachos Pepper Boats

Eat a pepper and you are onto a good start to eating the rainbow! They add a dash of colour to the table and make a perfect container for fun fillings.

Skinny Ms’s Mexican inspired recipe calls for turkey, but you can use kidney beans instead for a vegetarian option.

Tasks for your little sous-chef:

  • mix the cold turkey with spices and salsa;
  • spoon the meat mixture in the pepper boats;
  • decorate with dollops of sour cream and avocado to taste.

Kale, Pumpkin and Feta Filo Pies

We all know of kale’s health benefits, but kale is also very versatile. This filo pastry recipe by Delicious Magazine is a fun and colourful novelty on your table and, if your little sous-chef ends up loving them, why not pop one in their packed lunch?

Tasks for your little sous-chef:

  • beat the eggs, milk, grated parmesan, feta and paprika in a bowl;
  • brush the filo sheets with olive oil;
  • stack the filo pastry in the tins to make the base.
